Personal note from Jaylene:
Many have called and asked about further classes, so here is the story. My husband and I were called as missionaries for our church last August. We have been called to work with the Addiction Recovery program (which is rewritten, with permission, from the alcoholics anonymous book - using our 'higher power' talked about in AA, as the Savior and the Atonement in the LDS AR program). We have been asked to serve for a 24 month time period. We are loving our calling and learning so much. We are on a steep learning curve and gaining added insight into thoughts, patterns, and beliefs that lead to addictions. It is truly amazing to me how all that I am currently studying ties so directly into food and our choices as to what we will put into our bodies. I am excited to get back to teaching classes again because I feel that everything I am learning will just add to my understanding of food and our eating patterns. We are missionaries for many types of AR programs: eating disorders, substance abuse, pornography, family support meetings for those whose lives may have been affected by the addiction of another, and we also go to the work center (prison facility in Idaho Falls for work release) and do an AR recovery program there each Sunday. We love our work and the people we feel blessed to associate with!
I am also using this time to certify as a 'nutrition education trainer' (NET) through Dr. Joel Furhmans Nutrition Education Institute (NEI) course. This is an interesting quote by Dr. Furhman:
"We can actually grow to love those things that are killing us – in this case, food. This phenomenon is known as addiction and an addiction to certain foods can be just as deadly as many other addictions. However it is not too late to change.
Eat for Health, Joel Furhman, MD, pg. 13
When we were called as missionaries, I had classes scheduled to be taught through the following Feb. of 2011. I was able to finish the classes and the further training at LLCAI which I had previously scheduled through dec. of 2010.
I went to California to do further studies at Living Light Culinary art school in Sept. and Dec. of 2010. I was able to complete the advanced science and nutrition of raw food science course, and the unbaked pastries class as well as the raw food catering course. When I completed those courses, I had completed all the requirements to become a GOURMET raw food associate chef. Previously, I had 'just' been an associate raw food chef. It took me 9 years of traveling back and forth to the living light culinary art school to actually achieve that level. This is a little glimpse from the LLCAI Dec. 2010 newsletter (Kelsis and my picture taken with Cherie over 7 years ago.
We were taught how to make some amazing raw deserts in that raw pastries class (check out the class and LLCAI on rawfoodchef.com. The class I graduated with were amazing people from, literally, all over the world.) I have not yet been able to teach any classes created from my latest courses, but I am looking forward to getting back into teaching in the year 2012. Some of the delicious desert recipes I now have to share are lemon poppy seed cake with lemon buttercream frosting, tiramisu, creamy key lime pie, white chocolate raspberry cheese cake, California mudslide pie, and many others along with new ways and added ingredients to make true celebratory desserts! I am excited to share all that in the near future, along with a lot of other great recipes and classes.
I am still happy to schedule personal consultations and trainings that can be scheduled around our missionary work.
Anyway, until I get back to that, we will be attending the classes taught by Kris Groves - one full sat. every 6th week. They are amazing classes. Kris is very knowledgeable. She is the Programming Director of Renaissance Ranch, an LDS-based alcohol and drug treatment center located in Draper, Utah, and has had so much practical application of the things she teaches. I encourage anyone interested in recovery work to attend. What she teaches can help us to all find true happiness. (Space is limited so reserve your seat now)
After attending Jaylene's classes, I come home and try the recipes on my husband. It's so common to hear him say, "This is good. This is REALLY good!"
